I always hear everybody complaining about how dyeing their hair dries it out and causes damage but everytime I dye my hair it's so much softer, shinier, and just seems better overall. Why is this?

Because your hair is in good coundition, and you're obviously using good hair dye too. It also helps swell up the hair shaft so your hair is fuller and healthy looking.

You hair is in great condiditonand you haven't been putting it through a lot like some people do and yuor dyr isn't cheap it's had to be the expensive kind to take good as you say it does

Your hair is in good condition and your hair has adapted to you dying it. So with that being said most people experience problems when they dye their hair due to the fact that they don't keep their hair moisturized and they also tend to dye it too often.
I dye my hair and it comes out perfectly fine. I keep it moisturized and simple. I don't fry and I wait the amount of time that the box and sometimes my stylists suggest that I wait to dye it again. I mean everyone's hair texture is different so people get different results.
